Mango Salsa

This light and summery salsa can be eaten as an appetizer, or as a garnish for fish or quesadillas.

  • 3 Roma Tomatoes, diced
  • 1 mango, cubed
  • ½ medium spanish onion, diced (about ⅓ cup)
  • ½ tsp salt (plus more to taste)
  • ½ T lime juice
  • Freshly cracked black pepper, to taste
  • 1 tsp jalapeƱo pepper, finely diced *optional
  1. Quarter, seed and dice the Roma Tomatoes.
  2. Peel and dice the mango using this method
  3. Mix all of the ingredients together in a large bowl and let rest for about 10 minutes.
  4. Drain the excess liquid and serve.
